Of Jiro Dreams of Sushi, Song Fish Dealer and Salmon Porridge

Kat sini, boleh dikatakan ikan yang paling common dan mudah dijumpai di supermarkets is 'batang fish' dan toman fish. chinese pomfret, red snapper,salmon dan seangkatan dengannya bukan takde, tapi kena pegi retail stores yang jual ikan-ikan tersebut. ikan kembung, selar kadang-kadang je ada....or perhaps mmg ada banyak cuma timing kita berbeza, who knows ?

So ... I was googling, batang fish ni apa, encik Mon pernah belikan dan rasa macam ikan aya but I found out later that batang fish is actually spanish mackerel, or ikan tenggiri whereby, some people even call ikan tenggiri as tenggiri batang; hence the fish is called'batang' . Following my research, I later came across 'Song Fish dealer' facebook page of which I found myself giggling over with encik Mon ... they even have roadshows and currently on 'moving out' sale !

On the same note,a few days earlier,we watched a documentary called,"Jiro dreams of sushi". Apart from the admirable storyline,we were taken away by Jiro and his seafood dealers who were very knowledgable in their own niche. 

So this Song Fish Dealer reminds me to one of Jiro's fish dealers....We decided to check it out ... oh boy, the fish shop ada bermacam-macam jenis seafood and quite cheap!rambang mata ok ...

We bought a few packets of salmon cuts,shrimps, baby octopus, threadfin and golden pomfret. Too bad they prohibit photography in the shop.

I was excited to make salmon recipes for my little button ... so the next day, I referred to the fish porridge recipe by wendyinkk but did a slight adjustment that suits us as below:

For porridge:
2 Tbs rice (I used calrose rice)
16 Tbs water (didn't have measuring cup or weighing machine at that time)
1 stalk of spring onion; separated into white and green parts, finely sliced

Cook rice on stove with the white parts until all the rice absorbs the water and become porridge.

For fish:
A small portion of salmon or any kind of kid-friendly fish
A bit of crushed garlic
A dash of ground pepper
1/4 tsp sesame oil

Mix garlic and sesame oil with the salmon and steam for 10 minutes. Once cooked, leave it to cool and flake it with fingers. Watch out for any bones.

To serve:
Scoop the porridge into the bowl, garnish it with the green parts of spring onion and flaked salmon.

Another milestone?



Little button has high temperature on and off during the weekend ... we thought it might be due to frequent fall as he is in the process to learn to walk. But it could also be another tooth coming out ... having said that, we thought of making him a breastmilk popsicle ... so as to relief his teething. we bought an ice cube tray that is long and skinny shaped for sports water bottle at Ace hardware shop earlier, so we made the popsicle but it may need an overnight to freeze well. The tray look like this:

Apart from that, we made kerabu and steamed golden pomfret today. I ate kerabu taugeh a few days ago at Bank Rakyat's cafe and been thinking about it ever since. Tried Kak Nannie's recipe (as pasted below) and it was yummy.

Kerabu taugeh campur kerang

Bahan-Bahan :

2 cawan taugeh  
5 batang kacang botol  
1 biji bawang besar - boleh kurangkan 
1 biji cili merah - boleh tambah  
1/2 cawan udang kering  
1 cawan isi kerang rebus - boleh tambah 
jus limau nipis secukupnya 
sedikit belacan 
kerisik secukupnya  
Garam dan gula secukup rasa

** Boleh ditambah cili api kalau nak pedas lagi . Anda boleh tambah atau kurang ikut pada selera masing-masing ya..


Cara Penyediaan:

Bersihkan kacang botor dan dipotong nipis kemudian bersihkan taugeh dan dicelur dalam air panas selama 5 saat saja .
Mayang bawang besar nipis-nipis dan ketepikan dulu .Tumbuk udang kering dengan belacan dan cili merah sampai lumat , perah limau kasturi dan ambil jusnya.

Masukkan semua bahan-bahan ke dalam mangkuk yang sesuai dan digaul rata . Jika ada bahan yang terkurang boleh la ditambah ikut pada selera masing-masing.


Bawal Emas Kukus
Bahan-bahan:
1 ekor ikan bawal emas
2 ulas bawang putih - ketuk
Halia 1 inci - mayang
lada hitam
sos tiram
perahan lemon sket
air sedikit
garam

Cara Penyediaan:

Bersihkan ikan. Kelar perut ikan.Lumur semua bahan-bahan ke seluruh ikan dan kukus dalam 15-20 minit.

Siakap kukus ala thai & ayam goreng kunyit

Salam tengah hari ahad!



Rasa macam dah lama tak main masak-masak, ni kan ? iyo lahhh ... sejak-sejak ader little button, memang tak menang tangan ... nak-nak pulak now little button dah sibuk nak berjalan ... ke sana sini dia merayap ... tapi seb baik la tadi little button lena tido ... dapatlah mama and ayah makan lunch dengan penuh nikmat hihihi....menu arini ialah ikan siakap masak stim ala thai yang diambil resipi dari sini dan ayam goreng kunyit resipi Encik Mon sendiri (cececehhh ... !). Tapi resipi ikan stim kat bawah ni pwincess alter.


Ikan siakap masak ala thai

1 ekor ikan siakap
2 biji bawang merah - mayang
2 biji bawang putih - diketuk
1/2 inci halia - mayang
6 biji cili padi - dihiris nipis
2 helai dau limau purut-dihiris nipis
2 batang serai - ddiketuk
4 biji belimbing buluh - dibelah dua memanjang
1 sudu besar sos ikan
1/2 sudu besar kicap cair
1/2 sudu besar sos tiram
air sedikit*
daun sup**
garam secukup rasa**
1 sudu besar tepung jagung dibancuh dgn air room temp sedikit**

1. Panaskan air dlm pengukus.
2. Masuk ikan dalam bekas untuk mengukus, dan gaul semua bahan di seluruh ikan, luar dalam semuanya.
3. Masukkan air (*). Kukus ikan dalam 5-10 minit atau hingga ikan masak.
4. Masukkan bahan bertanda **. Sesuaikan rasa garam, gula. Jika masin, tambahkan air atau perah air limau.


Ayam goreng kunyit

1 dada ayam - dipotong dadu
1 biji bawang holland - hiris bulat tebal
segenggam french beans - sipotong serong

1. Gaul isi ayam dengan serbuk kunyit dan garam.
2. Panaskan sket minyak, dan stir fry isi ayam tadi hingga masak.
3. Masukkan bawang holland, stir lagi and lastly masukkan french beans. pwincess prefer my vege to be crunchy, so jgn masak sampai layu sangat.

Dah siap! makan dgn brown rice panas-panas, and air grenadine lemon and sambal totok .... berselera weii.

Lunch before the longggg holiday

This was done last 2 weeks and the dishes were simple but I really need to record it in the blog for future ref ~
We had brown rice, ikan kembung sambal and kailan celur oyster sauce with watermelon juice. There were just ikan kembung only in the freezer ... I wanted to make a simple singgang but the key ingredient for singgang is not in hand ... which is the lengkuas. Thank goodness chillies are in stock ... so I decided to make ikan kembung sambal.


Bahan-bahan:

3-4 ekor ikan kembung, digaul dengan serbuk kunyit dan garam
3 cili hidup*
10 cili padi*
2 ulas bawang putih*
1 bawang merah*
1 sudu besar cuka makan
air, garam dan gula secukupnya

Cara-cara:

1. Deep fry ikan yang telah digaul dgn serbuk kunyit dan garam. kalau garing sket pun takpe, lagi best.
2. Blend semua bahan bertanda * dalam dry mill.
3. Panaskan minyak, dan tumiskan bahan yang dah di-blend. Lepas dan mendidih, masukkan cuka makan dan air sket .. aritu terlebih letak air, kalau nak pekat, takyah letak air byk. Tunggu lagi sampai mendidih.
4. Masukkan garam/gula secukup rasa.

The Kailan Oyster Sauce follows this recipe ---> Egg Tofu with broccoli and oyster sauce, minus the egg tofu.

Masak simple-simple saja .... dah ada baby ni, masak dah leh lelama dahhhh

Steamed Salmon/Salmon Kukus

We have been meaning to eat salmon. But everytime we resolute to eat this baby, we get invited to eat elsewhere. murah rezeki ? Alhamdulillah .... syukur :)

And today Encik Mon is away for outstation ... and guess who get the honour to cook and savour the yumminess of this salmon.... ? Yup. It's princess on board ... heheheh.


I just cooked it as simple as possible. Since it's for 1 portion, it's even simpler. See below :

1 clove garlic
1 shallot
about 1 cm ginger
1 small stalk of lemongrass
2 Thai/bird's eye/any kind of hot chilli
a bit of lime juice
1/2 teaspoon of corn flour
1/2 teaspoon of corn oil
a dash of salt
a dash of knorr ikan bilis

1. Clean the fish
2. Spread all the ingredients all over the fish
3. Steam until it is cooked

Should put torch ginger/ginger flower (bunga kantan), kaffir lime leaves and coriander leaves tapi takde dalam stok laa .. but it's ok, sedap jugakkkk :)


On another note, I am really stumped of why I am unable to upload my cuti-cuti pictures, but other than that, I am able to upload. Misteri nusantara sungguh.
