Happy 2013... Lets Putu Bambu

Happy new year everyone! 2012 has been very colourful for me, what more, with Little Button joining us! May this year be a prosperous year for our little growing family, Ameen....

Well, I'll blog about Putu Bambu as the first entry for 2013 ....

I have been suffering from migraines for a few days already, have not been able to sleep and this morning, I vomitted non-stop. The doc said my blood pressure was a bit high and persuaded me to take the day off. Encik Mon fetched me but had to go to KEV for some work. I slept all the way.

While on the way, Encik Mon stopped by at a stall called,'Putu Bambu World' at Masjid Al-Ansar and bought a packet of putu bambu. Hoho ...yes ... I am now an ardent fan of putu bambu. Heran kan, I hate all kinds of putu (except putu mayam) since childhood, but Allah bukakkan hati untuk try once during our Temerloh trip ... and the rest is history. tehehehe~

Back to this putu bambu, they are green in colour ... nicely packed with a spoon inside (very ergonomic!!I like) and the palm sugar is placed generously at both ends of the putu bambu ... that way, you can cut it into half, and you'll get to enjoy the putu with sugar either side you take. Each pack is RM3.00 and it contains 5 pieces of putu bambu.


They are very scrumptious that on our way back from KEV, Encik Mon singgah sekali lagi and bought 2 more packs!! hihihi...so this is their contact number. banyak ghupenye cawangan ... nyum nyummmm

All Things Pumpkin .... Part 1

Pak Imam gave us 2 plump pumpkin and mama dear requested me to whip up Kuih Bakar Labu. And I was like, err ... I've never seen one, what more haven't tasted them all my life, so how do I make one? And thanks to Mat Gebu for this recipe, I managed to make these beauties and made both my parents happy. I modified the preparation so it became even faster :) (as below). We even gave a piece of Kuih Bakar to Pak Imam, and he was surprised as he didn't know that we can make kuih with pumpkin (he thought pumpkin can only be used in masak lemak labu).
To tell you the truth, I am a pumpkin hater. But, seeing my parents smiling from ear to ear after biting into these, made me curious, so I had one. Then, another one. Oh my, it does taste good, mind you!

So try this one out if you have pumpkin in your pantry :

Bingka Labu

Ingredients:
  • 5 Grade A
  • 200 ml water
  • 300 ml thick coconut milk (i used powdered coconut milk)
  • 200 g all purpose flour
  • 180 g castor sugar
  • 1/2 tsp salt
  • 1 tsp vanilla essence
  • 450 g pumpkin, steamed and mashed finely
Method:

  1. Preheat oven. Combine all except mashed pumpkin flesh and whizz in a blender.
  2. Fold in mashed pumpkin flesh into the batter. Then I sieved the batter+mashed pumpkin flesh through a colander and whisk briskly so as to break up the lumps.
  3. Pre-heat the greased pan and pour in the batter, then sprinkled some sesame seeds on top.
  4. Bake for 40 minutes and once baked, let cool before transfer.
We have extra pumpkin (about 1.5 biji extra, banyak woo) so I made steamed pumpkin muffin, taken from wendyinkk. Of late, I often use recipes that ask me to mix using blender rather than using mixer, and that saves my time. and I mean, A LOT.

Steamed Pumpkin Muffins
Adapted from Aunty Yochana
Yields12 steamed muffins (I used egg tart pans)

125gm steamed pumpkin flesh
1 egg
120gm sugar
100gm evaporated milk or coconut milk
30gm corn oil

180gm cake flour
20gm rice flour
1.5tsp baking powder

1. Prepare your steamer and bring the water to a boil
2. Put steamed pumpkin flesh, egg, sugar, milk and oil in blender and whizz for 30 seconds.
3. Sift cake flour, rice flour and baking powder into a mixing bowl.
4. Make a well in the center of the flour mixture and pour the blended ingredients into the well. Mix until well combined.
5. Spoon into lined steaming cups and steam on high heat for 15 minutes. It will bloom by itself, no need to make a cross with oil.

Verdict? well, my niece ate a lot but didn't comment much. my parents said there wasn't any pumpkin taste, mr hubs said very tasty and I, the pumpkin hater, well....you wouldn't want to hear the pumpkin hater's verdict, would you? haha ... juzt joking. I do agree with my parents' comment, though.

Ah, we have another 1 1/4 extra pumpkin. what next, ya?

Kuih Bakar

2 minggu lepas, pwincess ada cuba resipi satu kuih tradisional ni, semata-mata nak perabihkan santan kotak yang expiry date nak dekat. mule-mule tu tak budget pun nak buat kuih bakar.... yang sebenar2nya, sepanjang hayat setakat ni, tak penah lagi laa simpan angan-angan nak buat kuih bakar ... tah cane tah aritu klik klik klik , tetibe directed ke resipi kuih bakar joayee ni ... dalam hati macam, bior betul aku nak buat kuih bakar??? haha. xpelah kadok ... asalkan santan kotak tak masuk bakul sampah udah ... so camni ler resultnye ~


tak sangka la pulak senang giler nak buatnya .... pasal masa kecik2 dulu, papa cakap kalau nak buat kuih ni kena bakar guna sabut kelapa la aper la ... like, remeh giler!!

resipi ni takde unsur-unsur remeh langsung pasal dia guna cara moden so, sapa-sapa yang teringin nak makan tapi tak jumpa orang yang jual sedap/saje-saje nak cuba try test resipi ni ... try la ye ...

Bahan-bahan ( 6 org )

  • 1 cup gula
  • 1 cup jus pandan (atau air + pandan essence)
  • 2 cup tepung gandum
  • 2 1/4 cup santan (atau 1 can santan-450ml )
  • 2 tbs butter
  • 3 biji telur
  • 1/2 tsp garam
  • colour hijau
  • bijan

Cara-cara

  1. campurkan semua bahan. blend sampai sebati.
  2. masukkan 2 tbs minyak dlm loyang .
  3. panaskan loyang dlm oven. bila minyak dah panas, masukkan mixture tadi kuih, taburkan bijan. bakar @180 sampai brown atau garing (pwincess bakar dalam 50-55 minit cenggitu)

Singkong & keju

kelmarin ada sorang wak bermurah hati bagi ubi kayu so I thought of trying my skills on talam ubi . tanya mama, mama nak talam ubi kaler aper ... mama jawab nak kaler kuning. so, yellow it is. carik-carik resipi, sumanya kaler dark brown pada lapisan bawah pasal guna gula merah but since I'm going to make it yellow, I used gula pasir je lah.

pwincess ikut resipi talam ubi kak hanieliza and resipi ni memang dap tapi lenkali pwincess wanna sagat that ubi so that can get those birat urat-urat. I used springform untuk memudahkan proses potong-memotong nanti. so, masa pwincess nak bukak springform tu ... dup dap dup dap .... moment of truth ... talam ni leh berdiri sendiri ke tak ... sekali tup tup ... okaylah pulak dia set ... and everybody in the kitchen was like "... ooohhh......ahhhh ..... cantiknya......cantik, cantik ....."

even my brother's bibik pun joined gak "... waduh .... cantiknya....."

tapi pastu dia sambung statement dia: "tse tse tse .. cantiknya ....kalau warna pink .... ke merah-merah....lagi cantik, gituk....."

hmmm? talam ubi kaler pink??! kuih lapis sesuai la kaler pinky. angguk-angguk, iyakan je lah ....

pastu anak sedara pwincess dah start nak mintak rasa kuih tu .... so potong-potong laaa masuk pinggan aper sume. bibik tu pun was around lah masa tu .... sekali dia nyampuk ....

"cantiknya ..... kalau letak buah-buah atas tu ..... lagi cantik ...."

huhuhhu.....buah-buah atas kuih talam .... sedihnya dengar ... hmmm ....

dah lama pastu .... baru dia tanya. "itu apa ya, na? singkong ya?"

oohhhh..... entah-entah dia ingat talam tu kek kot masa mula-mula tadi....padanla bagi all those weird suggestions ... he he he....

KUEH TALAM UBI

Bahan Lapisan Bawah

1 kilo ubi kayu [mesinkan dgn 1 cawan air. Tapiskan ubi tu]

2 cawan air ]
1 cawan gula merah ] masak dan tapiskan
1 cawan gula pasir ]
daun pandan ]

Lapisan Atas
1 1/2 cawan tepung beras
4 1/2 cawan santan pekat [1 biji kelapa]
1 s/k garam

Cara:
1. Panaskan kukusan.
2. Ubi kayu dibersihkan dan potong kecil. Masukkan dalam blender dan mesinkan dengan 1 cawan air. Tapiskan. Buangkan air yg ditapiskan.
3. Ambil ubi dalam tapisan dan gaulkan dengan air gula.
4. Sapukan sedikit minya didasar loyang supaya senang untuk memotong kueh ini.
5. Masukkan dalam loyang dan kukuskan sehingga masak anggaran 30 minit.
6. Bancuh semua adunan untuk lapisan atas. Tapiskan.
7. Masukkan dalam periuk kecil dan masakkan sebentar atas api yg sederhana besar.
8. Kacau rata [jangan tinggalkan] dan tutup api.
9. Bila lapisan bawah[adunan ubi] taelah masak, perlahankan api dan cakarkan permukaan adunan ubi tu.
10. Tuangkan adunan lapisan atas dan kukuskan sekali lagi selama 20 minit.
11. Tutup api dan sejukkan betul2 sebelum di potong dan hidangkan.

Bahulu Batik Mekar Kukus

pwincess kalau bake, kadang-kadang ikut musim jugak. contohnya, bulan lepaih, memang dok kemaruk bake muffin. blueberry muffin la .... apple streusel muffin .... blueberry streusel topped muffin ... vanilla muffin suma pwincess bake. u name it man, cewah hehehe. baru-baru ni, pwincess kemaruk kukus apam plak.

petang tadi masa prince tengah dinner, sempat pwincess meng-apam jap. jumpa satu resipi ni nama dia bahulu batik mekar kukus. senang jo nak buat yang ni. rasa pun sedap.

apam atau fatt koh .. atau huat kuih ni .. selalunya tak complicated resipi dia .. cuma yang buat si tukang kukus berdebar-debar ialah apam tu merekah ke tak ... ada jugak resipi apam yang jenis tak merekah. tapi bila orang dah biasa makan apam merekah, dia dah ada perception iaitu kalau apam namanya, haruslah merekah di atasnya ... atau pun kadang-kadang disebut 'senyum' ... aaa whatever lah ...asalkan rasa dia sodap. apam yang pwincess buat tadi, nama dia bahulu batik mekar kukus. tapi ala-ala apam mekar je ... cuma yang ini ada pakai choc paste.

tadi prince report kat pwincess, bahulu tu baru masuk periuk 3 minit, dah mula merekah sket2 ... waduh, bukan kepalang gumbira weh dengar report tu. pastu lepas semayang, cepat2 la turun nak tengok end result dia. prince sampai dapur dulu, so dia tolong tutupkan api dulu. dia pun mcm excited, sekali .. dia bukak penutup steamer, dia terdiam. pwincess pun tak sesabo, tanye la dia ... camne mon? merekah tak?

mon jawab. mmm ... dia jadi pelik.

hah?! pelik camne?!! huhuhu ... hancur luluh hati dengar.

mon sambung cakap, "apam ni jadi bentuk mushroom. pelik la chom."

waduh. camne bahulu apam ni leh jadi bentuk mushroom? rupanya dia jadi rupa mcm piring astro parabola yang bersepah kat indon sana tu.
tak kesahla. yang pasti bahulu ni sedap dan gebu sangat. resipi from kak fida, myresipi.

Bahulu Batik Mekar KukusSumber: Kak Fida
Bahan (yields 12-14 pieces)
125 g tepung
1 tsp baking powder
115g castor sugar
1/2 tsp heaped ovallete
4 1/2 tbs fresh milk (i used full cream milk)
1 no. egg (grade A)
1/2 tsp vanilla essence
1 tsp chocolate paste/emulco
Kaedah:
1. Sift tepung and baking powder in bowl.
2. Add in castor sugar, ovallete, fresh milk, egg and vanilla essence.
3. whip with high volume until mixture thickens.
4. Divide mixture into 2 portions. Add choc paste/emulco into 1 portion and leave the other portion as plain flavour.
5. Scoop plain and choc mixture alternately into papercups until 3/4 full.
6. Steam pada api kuat selama 10-15 minit.
